A New Chapter in Fine Dining

As evening falls over the Arabian Gulf, each of Atlantis The Royal's seventeen restaurants takes on a life of their own Eight of these kitchens are led by internationally acclaimed chefs, including several Michelin-starred names, making it a popular attraction for epicureans from around the world.

 

Nobu by the Beach

Nobu is a name that needs little introduction. Founded in 1994 in Tribeca, New York, by Chef Nobu Matsuhisa and partners Robert De Niro and Meir Teper, it now has 56 locations globally, including its flagship outposts in Atlantis The Royal and Atlantis The Palm. Dubai however, offers something unique, as for the first time in its history, Nobu takes to the sands introducing – Nobu by the Beach. 

The beachside setting pairs perfectly with Nobu’s signature dishes. The miso black cod, delicately grilled to a glistening finish, is lightly brushed with caramelised miso to enhance the fish’s richness. Nobu’s influence extends to creations like yellowtail sashimi with thinly sliced jalapeño, where the spice adds gentle warmth that complements the buttery fish without overpowering it. Under open skies, the subtle luxury of the beachfront setting, with minimalist décor, frames the Gulf’s natural beauty.

Dinner by Heston Blumenthal

Born in London, Heston Blumenthal is a leading innovator in molecular cuisine. His relentless drive to question culinary conventions has made him one of the world's top chefs and led him to collaborate closely with food scientists and chemists. At Atlantis The Royal, his Tudor-inspired menu transports visitors to a bygone era, where nostalgic British recipes are ingeniously reinvented.

A highlight of the menu, the “Meat Fruit,” is a chicken liver parfait encased in a delicate mandarin glaze, crafted to resemble a piece of fruit. This is a clever presentation of culinary illusion and a nod to the grandeur of Tudor feasts. For dessert, the “Tipsy Cake” is a decadent creation, with pineapple roasted to a caramel finish atop a soft, airy sponge that holds its form beneath a crisp, golden crust. Blumenthal’s multi-sensory approach to classic tastes and textures is further enhanced by theatrical touches, such as the nitrogen ice cream trolley which is a tribute to 19th-century chef Agnes B. Marshall, one of the first to experiment with liquid gas in dessert making.

The most spectacular feature of the restaurant is the impressive mechanical, pineapple-shaped clock in the centre of the room, which comes to life every half-hour to rotate the pineapples roasting on a spit in the kitchen. This centrepiece gives the restaurant an atmosphere of decadence and eccentricity that is uniquely Heston Blumenthal.

Ariana's Persian Kitchen

Food has always played a big part in Ariana Bundy’s life. Her early childhood in Iran was filled with gatherings near the Caspian Sea or in the mountains, surrounded by family and delicious dishes. A love for century-old recipes became part of her DNA.

Chef Ariana Bundy now brings Persian cuisine to life in Atlantis The Royal with a menu that bridges classic flavours with modern interpretations. Her award-winning cookbook, Pomegranates and Roses, serves as the inspiration behind her work. 

Her fesenjoon – a classic Persian stew of chicken simmered in pomegranate molasses and walnuts – arrives with intensified depth, balancing sweet and tangy notes. Accompanying courses, like herbed rice paired with fragrant mahi sefid lend (white fish) offer a refreshing lightness, reminiscent of a Persian garden in spring. Each item feels intentional, respecting traditional ideas while appealing to contemporary tastes. The space itself feels like a modern interpretation of a vintage Persian home, adorned with soft colours and subtle lighting, adding to the authenticity and charm of Bundy’s creations and inviting meaningful conversations.

Estiatorio Milos

Founded by Greek-Canadian chef Costas Spiliadis in 1979, Estiatorio Milos has built a reputation for delivering pure, simple Mediterranean seafood, sourced directly from the Aegean. Spiliadis’ restaurant group remains entirely family-owned, with locations from Athens to New York and now Dubai. 

The “Milos Special” – paper-thin slices of zucchini and eggplant crisps paired with house-made tzatziki – has a delicate crunch that highlights the freshness of ingredients. The grilled octopus, served with capers and a hint of lemon, is beautifully seasoned and tender enough to cut with a fork. The restaurant’s neutral decor reflects the menu’s simplicity, with a light-filled interior that transports diners to a Greek isle, set against sea views. A special feature of the restaurant is the seafood market, where diners can select their own fresh catch, which the chefs prepare there and then, highlighting the natural quality of the food.

La Mar by Gastón Acurio

Chef Gastón Acurio, often called the king of Peruvian cooking, has 44 restaurants worldwide, showcasing the best of his country’s native cuisine. Already present in cities like London, Miami, and San Francisco, Acurio’s mission is to share the zest and boldness of seaside Peruvian cuisine with international audiences.

The classic sea bass ceviche is a must-try, with balanced notes of citrus, sweetness, and spice that present fresh fish cured in tiger’s milk, – a tangy Peruvian marinade of lime and chilli – topped with crunchy choclo (Andean corn) and red onion. The anticucho skewers, expertly charred and brushed with a piquant sauce, bring a distinctive taste. Taking influence from a Peruvian fisherman’s wharf, the open layout creates a relaxed and casual setting, while Acurio’s artistry ensures each dish leaves a lasting impression.

Ling Ling by Hakkasan

From its private elevator entrance to its wraparound terraces, Ling Ling masters the art of the dramatic reveal. The 180-degree views encompass the Palm Jumeirah, the Arabian Sea, and the city's ever-evolving skyline.

Ling Ling, Hakkasan’s latest concept, blends Cantonese fare with a mix of cocktails, all set to an eclectic soundtrack. The lively ambiance and late-night atmosphere evolve from drinking to dining to dancing and repeat.

The 24k gold A5 Wagyu maki exemplifies the kitchen’s style – a delicacy where each slice melts into the sushi rice. Lobster pad Thai, with a tangle of noodles and a hint of tamarind, mixes sweet and savoury infusions, giving both comfort and freshness. As evening falls, the dimly lit space transitions into a bar-like setting, creating a celebratory vibe.
